our first spear

In this photo, the spear might not look tall, but that's because there's a whole stack of mulch on top of the bed. This not only helps with weed control, but the asparagus spears come up through it and you get more whiteness in the spear, and therefore it's more tender. When you cut it, you cut well below the surface, so what you see here is only 50% of what you cut.
<<this skinny spear is also growing. This is from the first years growth planted 2 months ago. You don't harvest these, you let them grow all Summer. You can harvest off this plant next year.
My favourite way to eat asparagus is lightly steamed with a dressing made with dijon mustard, lemon juice, water, salt and pepper.
